Will a domain license allow use in multiple sub-domains on the same server?
e.g.
uat.domain.com
and
live.domain.com
Can I get "domain.com" licensed

That's precisely the problem I'm facing. I've licensed my root domain (mydomain.ca) but have two aliases on the same box. test.mydomain.ca and prodn.mydomain.ca. Neither is functioning. I'm using it with DNN and am getting an license exception thrown.
Should I have licensed *.mydomain.ca?
