Unfortunately, I've made a number of other changes to the cute editor files which I need for the product I've integrated the editor into which mean I can't upgrade.  Is there any way for me to change the existing code so that it uses a single click instead of a double click?

Your guys are correct. That's a bug. We just wrote a fix to resolve this problem.   Please download the hot fix from   Http://CuteSoft.net/download/CENETHotFix.zip.   To fix this bug, just copy the Tag_input.ascx into CuteSoft_clients/CuteEditor/Dialogs/Tag folder.  Keep me posted
