is it possible to get the italian translation files for the client side and the "operator" side?

Yes.

1. Server side language:

Modify CuteSoft_Client\CuteChat\Languages\it.xml

2. Operator side language:

Modify C:\LiveSupportOperator\Languages\it.xml file.
