Can I add addtional items to this drop down?

If so, how can I define what tags should be used to place at the beginning and ending of the text selected?

What if I want to add a new option to this?

For example:

editor.ParagraphsList = "Normal,Heading 1,Heading 2,Heading 3,Formatted,Definition Term, My Formatting"

How can I then specify what tags should be inserted when someone selects My Formatting from the paragraph dropdown??

Yes, but the string must specifiy a valid block format tag.
