How do I have the default font used in the editor window match the default used when the content is rendered after editing in the resulting web page?

Please check the following two properties:

Case 1: Content page uses style sheet files

Editor.EditorWysiwygModeCss Property

Specifies the location of the style sheet that will be used by the editable area. Multiple Style Sheets are supported. Example EditorWysiwygModeCss="example.css,~/portal.css,/default.css"

<CE:Editor EditorWysiwygModeCss="~/style/default.css" id="PostBodyRichText" runat="server"></CE:Editor>

Case 1: Content page uses in-page style

Editor.EditorBodyStyle Property
The style to be applied to the Editor body.

<CE:Editor EditorBodyStyle = "table { font:normal 12px arial; }" id="PostBodyRichText" runat="server"></CE:Editor>
